What I love about Valentine’s Day:
-Candy
-Seeing my parents happily going out on a date.
-Getting Valentines and feeling super-duper special even though everyone else got one almost exactly like it.

What I don’t like about Valentine’s Day:
-It’s not a holiday for single people.
-Me=single. But I’m okay with that. Except on Valentine’s Day.

(But the chocolate makes it all okay.)

Hugs & Pretzels Cookies

What you will need:

One bag of Snyder’s butter snaps
One bag of Hershey’s chocolate hugs
Pan

Preheat your oven to 250. Lay pretzels flat out on the pan (like the third picture). They shouldn’t overlap each other. Next, unwrap all the hugs and place one in the center of each of the pretzels (shown above). Put in the oven for 2-4 minutes. Take out of the oven and press the leftover pretzels on top of the hugs to make a sandwich. Don’t press down too far or you’ll have a mess. Keep the cookies on the pan, and put in in your refrigerator until hard. When they’re done, take them out and enjoy.

I got the recipe from my mom, but I have no idea where she got it from.

Mocha Brownies

I’m pretty sure the recipe is from the Meredith Corporation (I think it’s Better Homes and Gardens now). I made these today, and let me tell you: they’re amazing! You can’t really taste the coffee, but that’s fine with me because I don’t like the stuff anyways. 🙂

Ingredients:
1 cup granulated sugar
1/2 cup butter/margarine
1/3 cup unsweetened cocoa powder
1 teaspoon instant coffee crystals
2 eggs
1 teaspoon vanilla
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts

In a medium saucepan combine margarine/butter, granulated sugar, cocoa powder, and coffee crystals. Cook and stir over medium heat till margarine melts. Remove from heat; cool for 5 minutes. Add eggs and vanilla. Beat lightly by hand just till combined. Stir in the flour, baking powder, and salt. Stir in walnuts.

Spread the batter in a GREASED (I always seem to forget this part) 9x9x2-inch baking pan. Bake in a preheated 350° oven for 25 minutes or till done. Cool completely.

Frosting:
2 cups powdered sugar
1/4 cup unsweetened cocoa powder
3 tablespoons butter/margarine, softened (I used four tablespoons)
1/2 teaspoon vanilla
2 to 3 tablespoons milk

In a mixing bowl beat butter/margarine till fluffy. Gradually add 1 cup of the powdered sugar and cocoa powder, beating well.

Slowly beat in the 2 tablespoons of milk and the vanilla. Slowly beat in remaining sugar. Beat in additional milk, if necessary, to make a frosting of spreading consistency.

Makes about 12 servings.
